Put water and a raw egg into the pot, bring to a boil over high heat, then turn to medium heat and cook for 10 minutes until the egg is cooked. It is best to use a small pot with water to cover the eggs. The large pot I used put less water, so it had to cook for a while. -
2
Cut off the four sides of the toast and set aside. -
3
Chop a small amount of onion (about the size of a thin slice). -
4
Soak the hard-boiled eggs in cold water for a while, peel them and separate the egg whites and yolks. Add a spoonful of milk and a spoonful of salad dressing to the egg yolks and stir until smooth. -
5
Chop the egg whites into small pieces. -
6
Pour the egg whites and onions into the egg yolks, and add a little freshly ground black pepper. -
7
Stir evenly. -
8
Spread the beaten eggs evenly on a piece of toast, spread evenly, and then cover with another piece. -
9
Cut it in half diagonally and the broken egg sandwich is ready.
Tips
1. Boil the eggs. Put the cold water and eggs into the pot together. Bring to a boil over high heat, then turn to medium heat and cook. The eggs will not break easily.
2. I recommend using Kewpie’s salad dressing, which is not an advertisement and is purely a matter of personal taste.
